Spinach with Potatoes (Aloo Palak)


An excellent vegetarian dish made with spinach and potatoes. Served best with hot naan.

Ingredients:

  1. Spinach 2 bunches
  2. Dry fenugreek 1 tbsp.
  3. Potatoes 1/2 kg.
  4. Onions (sliced) 2
  5. Ginger paste 1/2tsp.
  6. Garlic paste 1/2tsp.
  7. Cumin seeds 2 tsp.
  8. Red chili powder 1 1/2tsp.
  9. Salt 1 1/2tsp.
  10. Turmeric powder 1/2 tsp.
  11. Tomatoes (chopped) 3-4
  12. Green chillies 4-6
  13. Oil 1/3 cup

Method:

  • Blanch the spinach and chop it finely.
  • In a pan put oil fry onions till light brown.
  • Then add cumin seeds, red chilli powder, turmeric powder, ginger and garlic fry for a minute.
  • Add potatoes and tomatoes cover ,cook for 15 minutes.
  • When water dries add spinach, dry fenugreek and green chilies.
  • Cook for 5 more minutes.
  • Serve with naan or rice.
