Lemon pickle

Ingredients:

  1. Lemon 10-12
  2. Green chilies 25
  3. Salt 2 tsp.
  4. Turmeric powder 1/2 tsp.
  5. Water as required

Method:

  • Wash and put cuts on the lemon.
  • In a bowl take lemons.
  • Add salt and turmeric powder and mix well.
  • Put them in a jar.
  • Add water enough to cover the lemons.
  • Cover the jar with a thin cloth so the air can pass through.
  • Keep it somewhere it can get sunlight for at least 2 hours.
  • Leave for 2 days but mix it daily.
  • After 2 days put cuts on the green chilies and add them to the lemon and mix.
  • Leave for another day or two.
  • Refrigerate when ready.

Pav Bhaji Masala

Ingredients:

  1. Red chili powder 1tbsp.
  2. Coriander powder 1 tbsp.
  3. Cumin seeds 1tsp.
  4.  Black pepper 1 tsp.
  5.  Cinnamon 1 tsp.
  6.  Clove 1 tsp.
  7.  Black cardamom 2
  8.  Dry mango powder 2 tbsp.
  9.  Fennel seeds 1/4 tsp.
  10.  Turmeric powder 1 tsp.

Method:

  • Grind all the above ingredients together.
  • Put in an air tight jar.
  • Use immediately or later making pav bhaji or any other similar dish .

Spicy eggplants (khattay beingan)

Ingredients:

  1. Eggplants 1/2 kg.
  2. Onions (sliced) 4
  3. Tomatoes (sliced) 4
  4. Coconut crushed 2 tbsp.
  5. Whole coriander 1 tbsp.
  6. Cumin seeds 1 tsp.
  7. Sesame seeds 1 tsp.
  8. Garlic cloves 8
  9. Green chilies 6
  10. Red chili powder 1 1/2 tsp
  11. Turmeric powder 1/2 tsp.
  12. Tamarind pulp 1/2 cup
  13. Salt 1 1/2 tsp.
  14. Curry leaves few
  15. Oil 1/2 cup

Method:

  • Take coconut crushed,whole coriander, cumin seeds, garlic,red chili powder, turmeric powder and sesame seeds grinder them together.
  • Heat oil in a pan add sliced onions.
  • Fry till get light brown.
  • Now add the grinded masala.
  • Then add tomatoes and curry leaves to it.
  • Cook till the tomatoes are soft and oil comes up.
  • Make small cuts on the eggplants and put them in the masala.
  • Put salt, green chilies and tamarind pulp.
  • Cook on low heat for about 20 to 30 minutes or the eggplants are soft.
  • Take out in a dish and serve.

Namak paray

Ingredients:

  1. Maida 1 cup
  2. Salt 1 tsp.
  3. Cumin seeds (zeera) 1/2 tsp.
  4. Carom seeds (ajwain)  1/4 tsp
  5. Oil 2 tbsp.
  6. Water to make dough
Method:
  • Sieve together flour and salt.
  • Mix in oil, carom seeds, and cumin seeds.
  • Knead with water into a medium dough.
  • cover and leave it for 1 hour.
  • Roll it thin in round shaped chappati.
  • Cut in small diamond shapes.
  • Heat oil in a wok.
  • Deep fry in oil.
  • Cool and keep in air tight container.

Chicken with mushrooms and chillies

Ingredients:

  1. Chicken (cut in long thin strips) 1/2 kg
  2. Button mushrooms (cut into thin slices) 1 can
  3. Green chillies 15-20
  4. Garlic chopped 1 tsp.
  5. Soy sauce 2 tbsp.
  6. Corn flour 2 tbsp.
  7. Sesame seed oil t sp.
  8. Chicken powder 1 tbsp.
  9. White pepper 1/2 tsp.
  10. Sugar 1/2 tsp.
  11. Oil 2 tbsp.

Method:

  • Heat oil in a wok.
  • Add garlic and green chillies.
  • Fry for few seconds take it out in a plate.
  • In the same wok add chicken cook till done.
  • Then put the mushrooms.
  • Add one cup water.
  • When boil comes add soy sauce,chicken powder, white pepper and corn flour dissolved in little water to thicken.
  • Add fried green chilies and sugar.
  • Take it out in a dish and serve with noodles or rice .

Cheese straws

Ingredients:

  1. Flour (maida) 1cup
  2. Salt 1 tsp.
  3. Cheddar cheese 1/2 cup
  4. Red chili powder 1/4 tsp.
  5. Cumin seeds 1/2 tsp.
  6. Baking Powder 1/2 tsp.
  7. Oil 2 tbsp.

Method:

  • Sift together the flour, red chili powder, baking powder, and salt, set aside.
  • Add cumin seeds and baking powder to the flour.
  • Make a dough adding water.
  • Leave aside for 1/2 an hour.
  • Make 3 equal size balls and roll it to a flat Chapatti.
  • Using a cookie press with a star tip, make 3-inch-long cheese straws, leaving at least 1/2 inch between each on an ungreased cookie sheet.
  • Heat oil in a pan.
  • Deep fry them till crispy.
  • Serve as a snack.

Boiled noodles

Ingredients:

  1. Egg noodles 1 packet
  2. Oil 1 tsp.

Method:

  • Fill a large pan half or three fourth filled with water,and set to boil on high heat.
  • When it begins to boil,add a teaspoon of vegetable oil,and then break up the noodles into four, from the packet and toss into the boiling water.
  • Allow to cook for about 6 minutes.
  • The noodles should be just cooked,can be slightly under done.
  • Use a fork to pull out a noodle to test for doneness.
  • Strain the noodles into a large colander.
  • Immediately run the noodles under a cold water tap.
  • This step can be done in the kitchen sink.
  • Set the cooked noodles aside while we get the seasonings ready.
  • Noodles must be cooked and strained before you begin the final preparation.
  • If you have a party or a dinner, you can keep all the ingredients on hand and the cooked noodles, cooked chicken,sliced vegetables, and toss into the final seasoning when ready to serve.
  • Always best eaten hot!

Chicken Chilli Dry

Ingredients for marination:

  1. Boneless chicken  1/2 kg.
  2. Soy sauce 1tbsp.
  3. Salt 1/2 tsp.
  4. Sesame seed oil 1 tsp
  5. Corn flour 1 tbsp.
  6. Egg 1/2
  7. Sugar 1/2 tsp.

Ingredients for sauce:

  1. Green chillies 10-12
  2. Corn flour 2 tbsp. dissolved in water
  3. Oil 2 tbsp.
  4. Garlic chopped 1 tsp.
  5. Chicken stock 1 cup
  6. White pepper 1/2 tsp.
  7. Chicken powder 1/2 tsp.

Method:

  • Marinade the chicken with soy sauce, salt, corn flour, sugar, egg and sesame seed oil.
  • Heat oil in a wok.
  • Add garlic fry.
  • Then add green chillies (cut lengthwise) fry for 1 minute.
  • Take out in a dish.
  • Put chicken in the same oil.
  • Cook till done.
  • Add chicken stock, soy sauce, white pepper and chicken powder.
  • Bring to boil.
  • Add corn flour to make thick.
  • Put fried green chillies.
  • Serve with egg fried rice or boiled noodles.
