Pulao Biryani


Ingredients chicken:

  1. Chicken 1 kg.
  2. Rice 3 cups
  3. Yogurt 1 cup
  4. Ginger garlic paste 2 tbsp.
  5. Red chili powder 1/2 tsp.
  6. Coriander powder 1 tsp.
  7. Turmeric powder 1/2 tsp.
  8. All spice powder 1/2 tsp.
  9. Salt 2 tsp.
  10. Black cumin seeds 1/2 tsp.
  11. Oil 2 tbsp.

Ingredients for rice:

  1. Sela rice 3 cups
  2. Whole coriander 2 tbsp.
  3. White cumin seeds 1 tbsp.
  4. Fennel seeds 2 tbsp.
  5. Whole black pepper 1 tsp.
  6. Cloves 1 tsp.
  7. Cinnamon 1 inch piece
  8. Black cardamom 2
  9. Ginger 1 small piece
  10. Mace 1 small piece
  11. Nutmeg 1 small piece
  12. Onion (sliced) 1
  13. Kewara few drops
  14. Milk 1/4 cup
  15. Yellow food colour a pinch
  16. Salt 3 tbsp.

Method:

  • Marinade the the chicken with yogurt, red chili powder, coriander powder, salt, turmeric powder, ginger garlic paste and black cumin seeds for half an hour.
  • Heat oil in a pan.
  • Add marinaded chicken to it.
  • Cook till the chicken is done and little water is left.

Method for rice:

  • Soak rice for at least 3 hours.
  • In a pan put 10 cups of water and bring to boil.
  • Take a small cotton cloth and put whole coriander, white cumin seed,fennel seeds,whole black pepper, cloves, cinnamon, black cardamom, ginger, mace and nutmeg.

  • Tie it with a string to make poultice.

  • Put this poultice in the pan of boiling water.

  • When the water starts to boil add rice and salt.
  • Cook for 10-15 minutes.
  • Strain the rice in the sieve.
  • Now put half rice in the pan, pour chicken masala cover with the other half rice.
  • Mix a pinch of yellow food colour and 2 drops of kewara in milk.
  • Sprinkle over it.
  • Fry onion in oil and pour the onions with oil on top of the rice.
  • Cover and leave on dum for 15-20 minutes on very low flame.
  • Take out in a dish and serve with raita.
