Peri Peri Chicken


  1. Whole Chicken (cut in 4 portions) 1
  2. Peri Peri Sauce 6 tbsp.or according to taste
  3. Salt 1/4 tsp.


  • Split the Breast bone, pound lightly to flatten chicken.
  • Put chicken in a big bowl.
  • Add peri peri sauce and salt.
  • Mix and refrigerate for 12 hours.
  • Heat griller.
  • Brush oil.
  • Grill until chicken is cooked through, turning occasionally and basting with additional pepper sauce, for about 45 to 60 minutes.
  • Serve with peri rice, potato wedges and hot peri peri sauce.

Ingredients for Peri rice:

  1. Rice (boiled) 3 cups
  2. De-seeded tomatoes ( chopped) 1/2 cup
  3. Capsicums (chopped) 1/2 cup
  4. Peri peri sauce 4 tbsp
  5. Salt to taste.
  6. Oil 1 tbsp.


  • Heat oil in a wok.
  • Add tomatoes, capsicums and rice fry for 2 minutes on high heat.
  • Now put  peri peri sauce and salt.
  • Mix well cook for another minute and serve with Flame grilled chicken.

Ingredients for wedges:

  1. Potatoes medium 4
  2. Salt 1/4 tsp.
  3. Black pepper ( crushed) 1/4 tsp.
  4. Oil 1 tbsp.


  1. Cut each potato into 12 wedges.
  2. Put them in a large bowl.
  3. Add salt, black pepper and oil.
  4. Toss to coat.
  5. Arrange in a single layer in a baking tray.
  6. Bake for 20 minutes.
  7. Turn and again bake for 10-15 minutes or until crisp.
