Mung Daal with Spinach (Daal Palak)


Ingredients:

  1. Mung daal 2 cups
  2. Spinach (chopped) 1 cup
  3. Fenugreek leaves 2 tbsps.
  4. Onion (sliced) 1
  5. Tomatoes (sliced) 2
  6. Green chillies (chopped) 1 tsp.
  7. Red chili powder 1 1/2 tsp.
  8. Turmeric powder 1/4 tsp.
  9. Coriander powder 1 tsp.
  10. Salt 1 1/2 tsps.
Ingredients for Baghar:
  1. Dried whole red chillies 6-8
  2. Cumin seeds 1tsp.
  3. Garlic (chopped) 2-3 cloves
  4. Oil 2 tbsps.
  5. Curry leaves few
Method:
  1. Soak daal for 1/2 an hour .
  2. Wash and boil daal with onion , tomatoes, red chilli powder, spinach, fenugreek leaves, green chillies, turmeric,salt and coriander powder.
  3. Add 4 to 5 cups of water.
  4. Cook till the daal gets tender and thick.
  5. Baghar: In a frying pan heat oil add dried red chillies, cumin seeds, garlic and curry leaves.
  6. Fry till it gets brown.
  7. Add baghar on top of daal.
  8. Serve with naan or boiled rice.
