Dahi Baingan (Egg plant with Yogurt)

  1. Egg plant (Baingan) 1
  2. Turmeric powder  1/4tsp.
  3. Red chili powder  1/4 tsp.
  4. Yogurt 1 cup
  5. Salt ( as per taste)
  6. Oil 2 tbsp.
  7. Dried red chillies 4
  8. cumin seeds 1/2 tsp.
  9. Curry leaves 6
  10. Chat masala 1/4 tsp.
  • Cut egg plant in circles.
  • Sprinkle salt, turmeric and red chilli powder.
  • Fry the egg plant in 1 tablespoon oil over medium heat till just turning brown.
  • Add more oil if needed.
  • Take them out in a serving dish.
  • In a separate bowl whisk yogurt with pinch of salt and red chilli powder.
  • Pour it on top of egg plant.
  • Heat 1 tablespoon oil.
  • Put dried red chillies and fry.
  • Add cumin seeds, curry leaves and pinch of turmeric fry for few seconds.
  • Then pour the mixture over the egg plant and yogurt.
  • Sprinkle little chat masala on top and serve.
