Chicken Tikka Karahi

Ingredients:

  1. Chicken 1 kg (cut into 4 pieces and put cuts)
  2. Ginger garlic paste 1 tbsp
  3. Yogurt ½ cup
  4. Tomato chopped 1
  5. Cumin roasted and crushed 1 ½ tsp
  6. Coriander roasted and crushed 1 ½ tsp
  7. Salt 1 tsp heaped
  8. Black pepper crushed 1/2 tsp
  9. Red pepper crushed 1 tsp
  10. Ginger sliced 2 tbsp
  11. Green chilies whole 12 (deep fried until colour changes)

Method:

  • Heat oil.
  • Fry chicken pieces for 10 minutes.
  • Take them out from the pan in a plate.
  • In the same oil add tomatoes, ginger garlic paste, cumin crushed, coriander crushed, black pepper crushed, red pepper crushed, salt and fry all for 5 minutes.
  • Add fried tikka pieces leave it on dum for 30 minutes.
  • Lastly add ginger and fried green chilies.
  • Serve with naan.

Chilli Cheese Burger

Ingredients for the Patti:

  1. Mince chicken 1/2 kg.
  2. Salt 1 tsp.
  3. Worcestershire sauce 2 tbsp.
  4. Green chilles 15
  5. Black pepper powder 1tsp.
  6. Bread slices 2
  7. Onion 1

For the sauce:

  1. Mayonnaise 2 tbsp.
  2. Tomato ketchup 1 tbsp.
  3. Chilli Garlic or Chilli sauce 1 tbsp.

Ingredients for the Burgers:

  1. Burger buns 6
  2. Cheese slices 6
  3. Lettuce leaves
  4. Tomato slices
  5. Onions sliced in rings

Method:

  • Chop onion in a chopper.
  • Take them out and squeeze till all water comes out.
  • In a chopper put onions, mince meat, bread slices, worcestershire sauce, salt, green chillies and black pepper powder.
  • Mix them together in the chopper.
  • Take out and make patties of it.
  • Grill them on the griller till done.
  • Mix together mayonnaise,tomato ketchup and chilli garlic sauce together.
  • Cut the burger buns into half.
  • heat them on the  griller or frying pan.
  • Spread sauce on the lower part of the bun.
  • Put lettuce then the patty followed by cheese slice and tomato.
  • Cover with the other half.
  • Serve with french fries, coleslaw and ketchup.

Chicken Seekh Kebabs with Gravy

Ingredients for Seekh Kebabs:

  1. Mince Chicken 1/2 kg
  2. Salt 1 tsp.
  3. Red chilli powder 1 tsp.
  4. Garam masala powder 1 tsp.
  5. Cumin seeds (roasted and crushed) 1 tsp.
  6. Whole coriander (roasted and crushed) 1 tsp.
  7. Ginger garlic paste 1 tbsp.
  8. Brown onion 2 tbsp.
  9. Egg 1
  10. Gram flour 1 tbsp.

Ingredients for Gravy:

  1. Onions (sliced) 3
  2. Tomatoes  4
  3. Ginger garlic paste 1 tsp.
  4. Red chilli powder 1 1/2 tsp.
  5. Coriander powder 2 tsp.
  6. Turmeric powder 1/4 tsp.
  7. Salt 1 tsp.
  8. Yogurt 1/2 cup
  9. Oil 1 cup.
  10. Coal (small piece for smoke)

Method for Seekh Kababs:

  • In a chopper put mince chicken, salt, red chilli powder, garam masala powder, cumin seeds, roasted and crushed whole coriander, ginger garlic paste, brown onions, egg and gram flour.
  • Blend it, until everything gets mixed.
  • Make long kebabs of the blended  mixture.
  • Keep aside.

Method for Gravy:

  • Heat oil in a pan.
  • Fry the onions till golden brown.
  • Take them out from the pan.
  • Grind brown onions and tomatoes into a fine paste.
  • Put it back in the pan.
  • Add garlic ginger paste, red chili powder, turmeric powder, coriander powder and salt.
  • Cook till the oil separates.
  • Add 1 cup water and bring to boil.
  • Now put kebabs one by one do not stir.
  • Lower the heat.
  • Whisk the yogurt.
  • Pour on top.
  • Mix lightly with shaking the pan.
  • Sprinkle whole spice powder on top.
  • Cover and cook for 20-30 minutes.
  • Garnish with chopped coriander leaves before serving.
  • Serve with peas pulao or Naan.

Peshawari chicken karahi

Ingredients:

  1. Chicken 1kg.
  2. Tomatoes 10-12
  3. Green chillies (small) 20
  4. Ginger Garlic paste 2 tsp.
  5. Salt 1 1/2 tsp.
  6. Red chilli powder 1 tsp.
  7. Garam masala powder 1 tsp.
  8. Green chillies (big) 6
  9. Ginger (cut in julienne) for garnishing
  10. Black pepper (crushed) to sprinkle on top

 

Method:

  • Boil chicken with 1 tsp.  ginger garlic paste and 1/2 tsp. salt in 1 cup water till it dries up.
  • Heat oil in a wok add tomatoes.
  • Cook till gets tender and water dries up.
  • Add boiled chicken, red chilli powder, ginger garlic paste and salt.
  • Cook on high heat for 4-5 minutes.
  • Add garam masala powder stir, cover and cook for another 3-4 minutes on low heat.
  • Add chopped green chillies.
  • Mix and close the fire.
  • Garnish with julienne ginger.
  • Sprinkle black pepper crushed on top.
  • Serve with naan.

Lemoni Tawa Keema

Ingredients:

  1. Chicken mince coarse ½ kg
  2. Oil ½ cup
  3. Onion chopped 1 cup
  4. Ginger garlic 1 tbsp heaped
  5. Blended tomatoes 2
  6. Turmeric ½ tsp
  7. Coriander seeds roasted and crushed 1 tsp
  8. Cumin seeds roasted and crushed 1 tsp
  9. Crushed red pepper 1 tbsp
  10. Lemon juice 3 tbsp
  11. Lemon cut into slices 1
  12. Coriander and green chilies as required
  13. Allspice 1 tsp

Method:

  • Heat ¼ cup oil on a tawa.
  • Fry chopped onion with ginger garlic.
  • Add mince, blended tomatoes, turmeric, coriander, cumin, crushed red pepper.
  • Cover and cook on tawa till done.
  • Lastly add lemon juice, allspice powder, sliced lemon, coriander and green chilies.
  • Stir cook for 1-2 minutes.
  • Take out in a dish.
  • Serve with naan.

Tandoori Chicken

Tandoori Chicken

Ingredients:

  1. Chicken( cut into 8 pieces)  1 large
  2. Lime juice  2tbsps
  3. Yogurt 1cup
  4. Red chilli powder 2tbsps.
  5. Salt 1 tsp.
  6. Ginger garlic paste 1tbsp.
  7. Garam masala powder 1 tsp.
  8. Oil 2 tbsp.

Method:

  • Make cuts on the Chicken pieces.
  • Mix together red chilli powder, garam masala powder, yogurt, oil, salt, lemon juice and ginger garlic paste.
  • Marinade the chicken pieces with this mixture and leave for 4-5 hours (you can keep it overnight in a refrigerator).
  • Arrange the pieces on a tray and cook it in a preheated oven for 20-25 minutes or charcoal grill.(If you don’t have an oven then brush oil over the chicken pieces and cook in a fry pan/directly on a gas stove fire till both sides are down).
  • Serve with green chutney and salad.

Croquettes

Croquettes

Ingredients:

  1. Chicken mince 1/2 kg.
  2. Potato (boiled) 1
  3. Black pepper powder 1 tsp.
  4. Salt 1/2 tsp.
  5. Chicken powder 1/2 tsp.
  6. Fresh cream 2 tbsp.
  7. Cheddar cheese (grated) 2 tbsp.
  8. Green chillies 2
  9. Bread crumbs 1 cup
  10. Flour 1 cup
  11. Eggs 2
  12. Black pepper powder a pich
  13. Salt a pinch
  14. Oil for deep frying

Method:

  • In a blender blend together chicken mince, potato, chicken powder, fresh cream, salt, black pepper powder, cheddar cheese and green chilies.
  • Roll and make croquettes with it.
  •  In a bowl take eggs and add pinch of salt and pepper.
  • Roll the croquettes in the flour.
  • Dip in the egg.
  • After this roll in the bread crumbs.
  • Repeat this procedure with all the croquettes.
  • Deep fry until grown brown.
  • Serve with tomato ketchup.

Stir Fried Mince Chicken with Shredded Vegetables

Stir fried mince chicken with vegetables

Ingredients:

  1. Mince chicken 1/4 kg.
  2. Carrots (shredded) 1 cup
  3. Cabbage (shredded) 1 cup
  4. Capsicum (Shredded) 1/2 cup
  5. Green chillies (sliced) 4
  6. Button Mushrooms (sliced) 6-8
  7. Garlic ((chopped) 1 tsp.
  8. Ginger (chopped) 1 tsp.
  9. Chicken powder 1/2 tsp.
  10. Salt 1/4 tsp.
  11. Black pepper 1 tsp.
  12. Soy sauce 2 tbsp.
  13. Oil 2 tbsp.
  14. Corn flour 1 tbsp.
  15. Water 1/2 cup.

Method:

  • Heat oil in a wok.
  • Add chopped ginger and garlic.
  • Fry for few seconds.
  • Then put minced chicken.
  • Cook for 3-4 minutes or until mince changes it colour and is cooked.
  • Add the vegetables and fry for few seconds.
  • Put salt, black pepper, chicken powder and soy sauce.
  • Toss.
  • Mix cornflour in the water and pour in the wok.
  • Cook till sauce gets thick.
  • Serve with boiled rice, noodles or egg fried rice.

Tso’s Chicken

Ingredients for marination:

  1. Boneless Chicken thigh ( cut into small bite size pieces)
  2. Salt 1/4 tsp.
  3. Black pepper 1/2 tsp.
  4. Soy sauce 1 tbsp.
  5. Sesame seed oil 1 tsp.
  6. Egg white 2 tbsp.
  7. Corn flour 2 tbsp.
  8. Flour 2 tbsp.
  9. Oil for deep frying

Ingredients for sauce:

  1. Chilli paste 1 tsp.
  2. Honey 1 tsp.
  3. Tomato ketchup 2 tbsp.
  4. Soy sauce 1 tbsp.
  5. Vinegar 1 tbsp.
  6.  Corn flour 1 tbsp.
  7. Chicken stock 1 cup
  8. Oil 1 tbsp.
  9. Ginger (crushed) 1/2 tsp.
  10. Dried red chillies 6-8
  11. Sesame seeds for garnishing

Method:

  • For Marination and Frying: In a bowl take corn flour, flour, soy sauce, salt, egg white, sesame seed oil and black pepper.
  • Mix well to make a paste.
  • Put chicken and coat with the mixture.
  • Leave aside to marinade for 10 minutes.
  • Heat oil in a wok and deep fry the chicken in small batches until light brown in colour.
  • For Sauce: In a bowl Take chilli paste, honey, tomato ketchup, soy sauce, vinegar, corn flour and chicken stock.
  • Stir until the sugar and cornstarch are dissolved.
  • Heat oil in a wok.
  • Add dried red chillies and garlic.
  • Fry for 20-30 seconds.
  • Pour in the sauce mixture.
  • Stir until thickened, about 1 to 2 minutes.
  • Add fried chicken.
  • Stir well to coat with sauce.
  • Take out in a dish.
  • Garnish with sesame seeds and serve with egg fried rice.
