Shami Kebabs

Ingredients:

  1. Beef (boneless) 1/2 kg
  2. Split chickpeas (channa daal) 1 cup
  3. Whole red chillies 8
  4. Ginger garlic paste 2 tsp.
  5. Salt 1 1/2 tsp.
  6. Cumin seeds 1 tsp.
  7. All spice powder (garam masala powder) 1 tsp.
  8. Onion 1
  9. Water 4 cups

For making Kebabas:

  1. Onion 1
  2. Green chillies 2
  3. Mint leaves  2 tbsp.
  4. Egg 1
  5. Oil for frying

Method:

  • Put meat, split chickpeas, salt, all spice powder, whole red chillies, onion, ginger garlic paste and cumin seeds in a pan.
  • Add water and cook till the meat is tender and water is completely dried.
  • Let it cool.
  • In a chopper blend together boiled meat, onion, green chillies and mint until they are mashed completely.
  • Take out in a bowl.
  • Add egg and mix well.
  • Make kebabs from this grinded meat.
  • Shallow fry from both the sides.
  • Serve with paratha or chutney.

Beef Bohri Cutlets

Ingredients:

  1. Mince beef 1/2 kg.
  2. Ginger garlic paste 3 tsp.
  3. Potato (boiled) 1
  4. Onion (cut in 4 pieces) 1
  5. Green chilies 2
  6. Mint leaves 1/2 cup
  7. Bread slices 2
  8. Red chilli powder 1 1/2 tsp.
  9. All spice powder (garam masala powder) 1 tsp.
  10. Salt 1 1/2 tsp.
  11. Bread crumbs 4 cups
  12. Eggs 4
  13. Oil for deep frying

Method:

  • In a chopper blend together mince beef, ginger garlic paste, boiled potato, onion, green chilies, mint leaves, cumin seeds, bread slices, red chilli powder, salt and all spice powder.
  • Make round shaped ball of the chopped mince by wetting hands with water.
  • Now put mince ball on your palm and with the other hand press it to make thin flat cutlets.
  • Coat it with the bread crumbs.
  • Repeat this procedure with all the other mince balls.
  • Heat oil in a wok.
  • Beat eggs, add a pinch of black pepper and salt.
  • Dip the cutlets in the egg and deep fry till golden in colour.
  • Serve with green chutney.

Gola Kebab

Ingredients:

  1. Mince beef 1 kg.
  2. Onion (brown and crushed) 2
  3. Ginger garlic paste 1 tbsp.
  4. Red chilli powder 2 tsp.
  5. All spice powder (garam masala powder) 1 tsp.
  6. Salt 2 tsp.
  7. Coconut (grated) 2 tbsp.
  8. Poppy seeds 2 tbsp.
  9. Gram flour (besan) 2 tbsp.
  10. Raw papaya (grinded to paste with skin) 2 tbsp.
  11. Oil for frying or grilling

Method:

  • Roast Poppy seeds, coconut and gram flour separately.
  • Grind them together.
  • In a chopper mix together mince meat, raw papaya paste , ginger garlic paste and onions.
  • Take it out in a bowl.
  • Add red chilli powder, salt, all spice powder and roasted grinded masala.
  • Mix them and keep aside for 1 hour.
  • Make thick oval shaped kebabs.
  • Shallow fry or grill them on grilller.
  • Take out in a dish and serve with salad and chutney.

Peshawari Chapli kebab

Ingredients:

  1. Mince beef 1/2 kg.
  2. Onion (chopped) 1
  3. Tomatoes (chopped) 2
  4. Tomato (thinly sliced) 1
  5. Green chillies (chopped) 3
  6. Fresh coriander (chopped) 3 tbsp.
  7. Mint (chopped) 3 tbsp.
  8. Spring onions (chopped green part) 3 tbsp.
  9. Ginger garlic paste 1 tbsp.
  10. Red chilli crushed 1 1/2 tsp.
  11. Salt 1 tsp.
  12. Flour 2 tbsp.
  13. Egg 1
  14. Whole coriander (crushed) 1 tbsp.
  15. Pomegranate seeds (anardana) 1 tsp.
  16. Oil for frying

Method:

  • Take mince beef in a bowl.
  • Add salt, red chilli crushed, ginger garlic paste, egg, flour, crushed whole coriander, anardana, fresh coriander, mint, onion, tomatoes, spring onions and green chillies.
  • Mix well.
  • Leave for half an hour.
  • Heat oil in a frying pan.
  • Make small patties of the marinated mince beef.
  • Put sliced tomato on top.
  • Shallow fry them from both the side till done.
  • Serve with naan.

Chelo Kebab

Chelo Kebab is considered the national dish of Iran. Very few ingredients are needed to make this simple but wholesome combination of rice and kebabs.

Ingredients:

  1. Mine beef or lamb 1/2 kg.
  2. Onions (chopped) 2
  3. Tomatoes 4
  4. Salt 1/2 tsp.
  5. Black pepper 1/4 tsp.
  6. Rice 2 cups (soak in water for half an hour)
  7. Butter 4 tbsp.
  8. Saffron 1/8 tsp.
  9. Milk 2 tbsp.

Method:

  • Chop meat, onions, salt and black pepper well in the chopper.
  • Leave in the refrigerator for 2 hours.
  • Press the meat around long, thick metal skewers and shape evenly.
  • Thread whole tomatoes on another skewer.
  • Grill each side for about five minutes, turning frequently.
  • If skewers are not available for barbecue, kebab can be shaped into long, thin portions on aluminum foil and grilled at high temperature in the oven.
  • Boiled the rice with salt till done.
  • Strain and put them back in the pan.
  • Add saffron in milk.
  • Mix and put on top of rice.
  • Cover and cook on a very low heat for 5 minutes.
  • Take out in a dish.
  • Put a teaspoon of butter on top.
  • Serve with grilled tomatoes and kebab.

Quick potato cutlets (Aloo tikki)

Ingredients:

  1. Potatoes (boiled and mashed) 6-8
  2. Cumin seeds 1 tsp.
  3. Salt 1 tsp.
  4. Red chili powder 1 tsp.
  5. Chat masala 1/2 tsp.
  6. Mint leaves (finely chopped) 2 tbsp.
  7. Green chilies (finely chopped) 3
  8. Eggs 2
  9. Oil for frying

Method:

  • In a bowl take mashed potatoes, red chili powder, salt, cumin seeds, chat masala, mint leaves and green chilies.
  • Mix them together.
  • Make round kebabs of it.
  • In a separate bowl beat eggs, add pinch of salt and pepper.
  • Heat oil in a frying pan.
  • Dip kebabs in the egg and shallow fry on both the sides.
  • Take out in a dish serve with chutney.

Bun kebab

Bun Kebab are sandwiches generally available as street burgers in Indo-Pakistan. They are prepared with a mixture of daal and mince and eaten with green chutney.

Ingredients for Kebab:

  1. Channa Daal 2cups
  2. Red chili crushed 2 tsp.
  3. Cumin seeds 1/2 tsp.
  4. All spice powder 1/2 tsp.
  5. Salt 1 1/2 tsp.
  6. Ginger garlic paste 2 tsp.
  7. Onions 2
  8. Green chilies 3
  9. Coriander leaves 3 tbsp.
  10. Eggs 4
  11. Oil 1/2cup

Ingredients for making bun kebab:

  1. Buns 10
  2. Green chutney 1cup
  3. Onions 2 cut into thin slices and wash with little salt

Method for kebab:

  • Boil daal with crushed red chili, all spice powder ,1 onion,cumin seeds, salt and ginger garlic paste till it gets tender and water dries up.
  • In a chopper process boiled daal, 1 onion, green chilies and coriander leaves.
  • Mix well.
  • Make round kebabs.
  • Take egg white in a bowl and whisk till it becomes frothy.
  • Beat the egg yolks in a  separate bowl.
  • Add it in the egg white and mix well lightly with fork.
  • Heat oil in a frying pan.
  • Put Kebab in the pan and cover with beaten eggs.
  • Fry from one side till the egg forms it shape.
  • Then turn the side and cook until done.

Method for making bun kebab:

  • Cut buns in half.
  • In a pan with little oil heat the buns on both side.
  • Spread green chutney on the lower part.
  • Then put little onions.
  • Top with kebab and cover with other half of the bread.

Karahi kofta kebab

Kofta kebabs are ball shaped kebabs cooked in a wok. Mint leaves give a very good taste to it.The coal smoke gives the grilled charcoal taste. Best to be eaten with hot naans or flat bread.
Ingredients:
  1. Beef Minced 1/2 kg
  2. Onion 2
  3. Egg 1
  4. Bread Slices 3
  5. Ginger garlic paste 2tsp
  6. Red chili powder 1tsp
  7. Cumin seeds 1tbsp
  8. Black Pepper whole 1tsp
  9. Coriander whole 2 tbsp
  10. All spice powder (garam masala powder) 1 tsp.
  11. Lemon juice 2 tbsp
  12. Mint leaves (finely chopped) 1/2 cup
  13. Green chilies 2-4
  14. Salt To taste
  15. Coal 1 piece
  16. Oil 3 to 4 tbsp

Method : 

  • Take beef minced, onions, egg, bread slices, ginger garlic paste, red chili powder, cumin seeds, black pepper whole, coriander whole, salt, green chilies and process them in a chopper.
  • Take out in a dish and mix finely chopped mint.
  • Now make kofta (small ball shaped)  from it.
  •  In a wok heat oil and put koftas with 1/2 cup water.
  • Cook till it dries.
  • Put lemon juice, all spice powder and close the fire.
  • To give a smoked taste to a kebab place a small piece of hot charcoal in a small bowl and pour few drops of oil on it .
  • Cover for few minutes.
  • Take out in a dish.
  • Garnish with mint leaves and serve with chutney and naan.


Chicken Reshmi Kebab

Ingredients:

  1.  Chicken mince 1 kg.
  2.  Egg 1
  3. Green chilli paste  2 tbsp.
  4. Cream 1/2 cup
  5. Onion 1
  6. White pepper powder 1 tsp.
  7. All spice powder 1tsp
  8. Salt 2 tsp.
  9. Ginger garlic paste 1 tbsp.
  10. Raw papaya paste 1 tbsp.
  11. Black pepper powder 1 tsp.
  12. Gram flour (besan) 2 tbsp.
  13. Cumin powder 2 tsp.
  14. Cardamom powder 1/2 tsp.
  15. Cooking Oil 1tbsp.

Method:

  • Mix together mince chicken, chopped onion and  cumin powder.
  • Process them in a chopper.
  • Now add  black pepper powder, oil,  salt, white pepper, cream, egg, green chilies, ginger garlic paste, raw papaya paste, gram flour, cardamom powder and  all spice powder.
  • Mix with a spoon.
  • Refrigerate for half an hour.
  • Make long shape kebabs of it.
  • Shallow fry or put them on skewers and charcoal grill.
  • Serve with raita and onions.
