Hakka Noodles

Ingredients for Noodles:

  1. Noodles (boiled) 1 pkt.
  2. Carrots (cut lengthwise) 1
  3. Cabbage (shredded) 1 whole
  4. Onion (sliced) 1
  5. Capsicum (cut lengthwise) 1
  6. Crushed red chillies 1 tsp.
  7. Dark soy sauce 4 tbsp.
  8. Vinegar 1 tbsp.
  9. Spring onions (chopped) for garnishing
  10. Vegetable oil 2 tbsp.
  11. Sesame seed oil 1 tsp.

Ingredients for Sauce:

  1. Chilli sauce 3 tbsp.
  2. Tomato Ketchup 3 tbsp.
  3. Sesame seeds 3 tbsp.
  4. Garlic (chopped) 1 1/2 tsp.
  5. Ginger (chopped) 1 tsp.

Method For sauce:

  • Grind together ginger, garlic and sesame seeds with 2 tbsp. water.
  • Add chilli sauce and tomato ketchup to the grinded paste.
Method for Noodles:
  • Heat oil in a wok.
  • Put red chilli crushed and fry for few seconds.
  • Add onions and fry for 2 minutes.
  • Put grinded paste and cook for another 2-3 minutes.
  • Add carrots,cabbage and capsicums.
  • Cook for 2-3 minutes.
  • Add soy sauce and vinegar.
  • Mix and put boiled noodles.
  • Toss so that all noodles are covered with the sauce.
  • Sprinkle sesame seed oil.
  • Take out in a dish.
  • Garnish with spring onions and serve.

Stir Fried Egg Noodles with Chicken Chunks

Ingredients:

  1. Egg noodles 1 pkt.
  2. K&N’s chicken chunks 2 cups
  3. Napa cabbage (chinese cabbage shredded) 3 cups
  4. Carrots (shredded) 1 cup
  5. Capsicums (cut in thin slices) 1
  6. Bean sprouts 1/4 kg.
  7. Ginger (chopped) 1 tsp.
  8. Soy sauce 3 tbsp.
  9. Oyster sauce 1 tbsp.
  10. Chilli sauce 2 tbsp.
  11. Sesame seed oil 1 tsp.
  12. Knorr chicken cube 1
  13. Corn flour 1 tsp.
  14. Oil 1 tbsp.

Method:

  • Boil the noodles and keep aside.
  • In a wok heat oil.
  • Add ginger and fry for few seconds.
  • Add chinese cabbage, carrots, capsicums and bean sprout.
  • Fry for one minute.
  • Add chicken chunks.
  • In a bowl mix together soy sauce, chilli sauce, oyster sauce, chicken cube and corn flour adding little water.
  • Add it to the wok.
  • Cook till it gets thick.
  • Add noodles and toss.
  • Sprinkle sesame seed on top.
  • Take out in a dish and serve.

Vegetable and Noodle Soup

Ingredients:

  1. Maggi or Knorr noodles 1 pkt.
  2. Carrot (shredded) 2 tbsp.
  3. Napa cabbage or Chinese cabbage (roughly chopped in big pieces) 4-5 leaves
  4. Mushrooms (sliced) 2-3 tbsp.
  5. Chicken stock 5 cups
  6. Corn flour 2 tbsp.
  7. White pepper powder 1/4 tsp.
  8. Light soy sauce 1 tbsp.
  9. Salt 1/2 tsp.
  10. Sesame seed oil 1/2 tsp.

Method:

  • Put chicken stock with noodles in a pan and cook for 10 minutes.
  • Add carrots and mushrooms.
  • Cook for another 3-4 minutes.
  • Put napa cabbage, soy sauce, white pepper and salt.
  • Dissolve corn flour in little water.
  • Add it to the soup.
  • When the soup gets little thick close the fire.
  • Sprinkle sesame seed oil.
  • Take out in a serving bowl and serve.

Macaroni in White Sauce

Ingredients:

  1. Macaroni (elbow shaped)  2 cups
  2. Mushrooms (cut in slices) 1 can
  3. Butter 1 tbsp.
  4. All purpose flour 1 tsp.
  5. Milk 1 cup
  6. Cheddar cheese 1 tbsp.
  7. Salt 1/4 tsp.
  8. Black pepper powder 1/4 tsp.

Method:

  • Boil macaroni for 20-25 minutes.
  • Strain them in the colander.
  • Wash with cold water.
  • Add few drops of oil.
  • In a pan melt butter and add all purpose flour.
  • Remove from the heat and mix well.
  • Add milk and put back on fire.
  • Cook stirring till boils.
  • Add mushrooms, salt, black pepper powder and cheddar cheese.
  • Cook till cheese melts.
  • Add boiled macaroni.
  • Mix well.
  • Take out in a dish and serve.

Pasta with Barbecue Sauce

Ingredients for pasta:

  1. Spiral shaped macaroni 1 pk.
  2. Oil 2 tbsp.
  3. Cheddar cheese 2 tbsp.
  4. Mayonnaise 1 tbsp.
  5. Salt to taste
  6. Crushed red chillies 1 tsp.
  7. Jalapeno peppers ( For  Garnishing)

Ingredients for sauce:

  1. Oil 2tbsp.
  2. Onion 1
  3. Tomatoes 2
  4. Water half a cup
  5. Vinegar 1 tbsp.
  6. Chilli sauce 4 tbsp.
  7. Worcestershire sauce 2 tbsp.

Method for pasta :

  • First of all boil the macaroni.
  • Heat oil in a pan.
  • Add macaroni.
  • Then add cheese and mix it until the cheese is melted.
  • Put mayonnaise , salt and crushed chilli peppers.

Method for sauce :

  • Heat oil in a pan.
  • Add onions and saute until it gives a light golden brown colour.
  • Then put tomatoes and mix it till it forms a paste.
  • Add water , chilli sauce, worcestershire sauce and vinegar.
  • When sauce becomes little thick it means its ready to be served.
  • Top pasta with the sauce and add jalapeno peppers for garnishing.

Egg Noodles with Chicken Mince

Ingredients:

  1. Egg noodles (boiled) 3 cups
  2. Chicken mince 1 cup
  3. Carrots (shredded) 1cup
  4. Cabbage (shredded) 1 1/2 cup
  5. Capsicum (cut thin lengthwise) 1/2 cup
  6. Garlic (chopped) 1 tsp.
  7. Ginger (chopped) 1 tsp.
  8. Soy sauce 3 tbsp.
  9. Chilli sauce 2 tbsp.
  10. Tomato ketchup 2 tbsp.
  11. Red chilli crushed 1/2 tsp.
  12. White pepper 1/8 tsp.
  13. Salt 1/2 tsp.
  14. Chicken powder 1/2 tsp.
  15. Corn flour 1 tsp.
  16. Water 1/2 cup
  17. Oil 1 tbsp.
  18. Sesame seed oil 1 tsp.

Method:

  • Heat oil in a wok.
  • Add chopped ginger and garlic.
  • Fry for few seconds.
  • Add chicken mince and cook till done.
  • Now put carrots, cabbage and capsicums.
  • Fry for 1 minute.
  • Add soy sauce, chilli sauce, red chilli crushed, salt, white pepper, chicken powder and tomato ketchup.
  • Fry for another minute.
  • Mix corn flour in water and put in the wok.
  • Cook till gets thick.
  • Put boiled noodles and mix well.
  • Sprinkle sesame seed oil on top.
  • Take out in a serving dish.
  • Put crushed red chillies on top and serve.

Pasta with Chicken and Vegetables

Ingredients:

  1. Pasta (boiled) 4 cups
  2. Peas (boiled) 1 cup
  3. Carrots (cut into small cubes) 1 cup
  4. Boneless chicken (cut into small cubes) 1 cup
  5. Crushed red chillies 1 1/2tsp.
  6. Chicken powder 1tsp.
  7. Soy sauce 2tbsp.
  8. Black pepper powder 1/4tsp.
  9. Tomato Ketchup 2tbsp.
  10. Garlic (chopped) 1tsp.
  11. Water 1/2 cup
  12. Cornflour (dissolved in water) 1tsp.
  13. Oil 1tbsp.

Method:

  • Heat oil in a pan.
  • Add garlic and fry for few seconds.
  • Put chicken and cook till done.
  • Now add peas, carrots, soy sauce, red chilli crushed, black pepper powder, chicken powder, tomato ketchup and water.
  • Bring to boil.
  • Add cornflour to make it thick.
  • When the sauce gets thick add pasta.
  • Mix, cook for few seconds.
  • Take out in a dish and serve.

Boiled noodles

Ingredients:

  1. Egg noodles 1 packet
  2. Oil 1 tsp.

Method:

  • Fill a large pan half or three fourth filled with water,and set to boil on high heat.
  • When it begins to boil,add a teaspoon of vegetable oil,and then break up the noodles into four, from the packet and toss into the boiling water.
  • Allow to cook for about 6 minutes.
  • The noodles should be just cooked,can be slightly under done.
  • Use a fork to pull out a noodle to test for doneness.
  • Strain the noodles into a large colander.
  • Immediately run the noodles under a cold water tap.
  • This step can be done in the kitchen sink.
  • Set the cooked noodles aside while we get the seasonings ready.
  • Noodles must be cooked and strained before you begin the final preparation.
  • If you have a party or a dinner, you can keep all the ingredients on hand and the cooked noodles, cooked chicken,sliced vegetables, and toss into the final seasoning when ready to serve.
  • Always best eaten hot!

Stir fried noodles

Ingredients for chicken marination:

  1. Boneless chicken 1 cup
  2. Soy sauce 1 tbsp.
  3. Sesame seed oil 1 tsp.
  4. Salt 1/4 tsp.
  5. Chili paste 1/2 tsp.
  6. Sugar 1/4 tsp.
  7. Corn flour 1/2 tsp.

Ingredients for stir fry:

  1. Egg noodles (Boiled) 1 packet
  2. Carrots 1 cup
  3. Cabbage 2 cups
  4. Broccoli 2 cups
  5. Ginger and garlic chopped 1 tbsp.
  6. Green chilies chopped 1 tbsp.
  7. Soy sauce 2 tbsp.
  8. Chili paste 1 tbsp.
  9. Oyster sauce 2 tbsp.
  10. Chicken powder 2 tbsp.
  11. Corn flour 1 tbsp.
  12. Water 1 cup
  13. Sesame seed oil 1 tsp.

Method:

  • Marinate the chicken with soy sauce, sugar, chili paste, corn flour, salt and sesame seed oil.
  • Leave for 10 minutes.
  • In a wok heat oil.
  • Fry ginger, garlic and green chilies.
  • Add marinated chicken to it.
  • Fry till it changes colour and is cook.
  • Now put carrots, broccoli and cabbage.
  • Mix and cook for 1 minute.
  • Add soy sauce, chili paste, chicken powder and oyster sauce.
  • Dissolve corn flour in water add this to it.
  • Cook till gets thick.
  • Now add boiled noodles.
  • Add sesame seed oil.
  • Toss the noodles.
  • Take it out in a dish and serve.
