Mini Nuggets Burgers

Ingredients for Chicken Nuggets:

  1. Boneless chicken breast (cut into cubes) 1/2 kg.
  2. Salt 1/2 tsp.
  3. Mustard powder or paste 1 tbsp.
  4. Red chilli crushed 1 tsp.
  5. Black pepper crushed 1/4 tsp.
  6. Chicken powder 1/2 tsp.
  7. Vinegar 1 tbsp.
  8. Ginger garlic paste 1 tsp.
  9. All purpose flour (maida) 1 cup
  10. Baking powder 1/2 tsp.
  11. Oil for frying

Ingredients for Burgers:

  1. Mayonnaise 3 tbsp.
  2. Tomato ketchup 1 tbsp.
  3. Lettuce
  4. Cucumbers
  5. Mini burger buns as requried

Method:

  • Marinade the chuicken with salt, red chilli crushed, black pepper, chicken powder, vinegar, mustard powder or paste and ginger garlic paste.
  • Leave aside for half an hour.
  • In a bowl mix together baking powder and all purpose flour.
  • Coat the chicken pieces with it.
  • Shallow fry them until cooked and brown in colour.
  • In a bowl mix together mayonnaise and tomato ketchup.
  • Cut the burger buns in half.
  • Spread the mayonnaise.
  • Put lettuce , then cucumber slices.
  • Place chicken nuggets on top
  • Cover with the other half of the bun.
  • Serve with tomato ketchup.

Cold Egg Sandwiches

Ingredients:

  1. Hard Boiled Eggs 2
  2. Unsalted Butter 1 tbsp.
  3. Salt less than 1/4 tsp.
  4. Black pepper 1/4 tsp.
  5. Bread slices 6

Method:

  • In a bowl take boiled eggs, salt, black pepper and unsalted butter.
  • Mash well with the fork or masher till it comes in a form of a paste.
  • Spread this egg paste on a slice of bread.
  • Cover with the other slice.
  • Follow this with other slices.
  • Remove the edges of the bread slices and then cut it diagonally.
  • Serve with Ketchup.

Chicken Chunks Grilled Sandwich

Ingredients:

  1. K&N’s chicken chunks 1cup
  2. Bread 6 slices
  3. Tomatoes (sliced) 1
  4. Cucumber (sliced) 1
  5. Mayonnaise 2 tbsp.
  6. Oil few drops

Method:

  • Cut the bread slices with the round shape cutter.
  • Spread mayonnaise on all the slices.
  • Put chicken chunks on one slice.
  • Top with the layer of sliced tomatoes and cucumbers.
  • Cover with the other slice of bread.
  • Heat firing pan or grill pan.
  • Sprinkle few drops of oil.
  • Grill the sandwich from both the side.
  • Repeat this with the other slices of bread.
  • Serve with tomato ketchup.

Bihari Chicken Paratha Roll

Ingredients for Paratha:

  1. Whole wheat flour (atta) 2 cups
  2. All purpose flour (maida) 2 cups
  3. Salt 1/4 tsp.
  4. Water for making dough
  5. Oil 3/4 cup

Ingredients for Bihari Chicken:

  1. Boneless chicken breast (cut into cubes) 1/2 kg.
  2. Raw papaya paste 1 tbsp.
  3. Salt 3/4 tsp.
  4. Red chilli powder 1 tsp.
  5. All spice powder (garam masala powder) 1/2 tsp.
  6. Ginger garlic paste 1 tsp.
  7. Oil 1 tbsp.
Ingredients for making Roll:
  1. Boneless bihari chicken
  2. Paratha
  3. Onions (sliced) 1
  4. Mint raita 1 cup
Method for Paratha:
  • Mix salt in flour.
  • Knead with water to make a dough.
  • Leave for at least 1 hours.
  • Make balls and roll them in round shaped paratha.
  • Apply ghee then sprinkle flour and give a shape like a round ball.
  • Roll it in a form of a round shaped paratha.
  • Cook on tawa with ghee on low flame.
Method for Bihari Chicken:
  • Marinade the chicken with oil, ginger garlic paste, red chilli powder, salt, all spice powder and raw papaya paste for 1 hour.
  • Cook in a pan on high heat till it’s cooked and water is completely dried.

Method for making Roll:

  • Take Paratha, spread mint raita on it.
  • Put boneless bihari chicken on one side of the paratha.
  • Top with little onions.
  • Roll it from one side to another.
  • Serve with mint raita.

Potato Stuffed Golden Coins

Ingredients:

  1. Potatoes (mashed) 2
  2. Bread slices 10
  3. Red chilli powder 1/2 tsp.
  4. Salt 1/2 tsp.
  5. Mint leaves (chopped) 1 tsp.
  6. Cumin seeds 1/4 tsp.
  7. Eggs 2
  8. Black pepper a pinch
  9. Salt a pinch
  10. Oil for frying

Method:

  • Take mashed potatoes in a bowl.
  • Add salt, red chilli powder, cumin seeds and mint leaves.
  • Mix them.
  • Cut the bread slices with round shaped cutter or using any round shaped bowl.
  • Spread mashed potatoes on one slice of a bread and cover with the other slice.
  • Beat eggs in a bowl with salt and pepper.
  • Dip the sandwiches in the egg and deep fry till golden.
  • Take out on the kitchen towel.
  • Place them on a serving dish.
  • Serve with ketchup.

Quick and Easy Tuna Sandwich

Ingredients:

  1. Canned tuna (half can)
  2. Brown bread 4 slices
  3. Cucumber (sliced) 6-8 slices
  4. Tomatoes (sliced) 6 slices
  5. Black pepper powder a pinch
  6. Margarine or mayonnaise 1 tbsp.

Method: 

  • Spread margarine on all slices of bread.
  • Mix black pepper powder in tuna.
  • Put tuna on one slice of the bread.
  • Place cucumber and tomatoes on top.
  • Cover with the other slice of bread.
  • Remove the edges of the sandwich.
  • Cut diagonally.
  • Do same with the other slices of bread.
  • Put in a serving dish.
  • Garnish with cucumbers or tomatoes and serve.

Chicken Steak Sandwich with Mushroom and Cheese Sauce

Ingredients for marination:

  1. Boneless chicken breast fillet 2
  2. Salt 1 tsp.
  3. Black pepper powder 1/2 tsp.
  4. Chilli sauce 1 tbsp.
  5. Worcestershire sauce 2 tbsp.
  6. Soy sauce 1 tbsp.
  7. Mustard powder 1 tsp.
  8. Oil 1 tbsp.
Ingredients for mushroom sauce:
  1. Mushrooms (cut in thin slices) 2 tbsp.
  2. Brown sugar 1/2 tsp.
  3. Butter 2 tsp.
  4. Flour 1 tsp.
  5. Salt a pinch
  6. Black pepper powder a pinch
  7. Cheddar cheese (shredded) 2 tbsp.

Ingredients for sandwich:

  1. Croissant 2
  2. Cucumber (cut into small pieces) 1
  3. Tomatoes (cut into small pieces) 1
  4. Lettuce 2-3 leaves
  5. Mayonnaise 2 tbsp.
  6. Black pepper powder a pinch
  7. Salt a pinch
  8. Mustard powder 1/2 tsp.
  9. Chilli sauce 1 tsp.

Method:

  • Marinade the chicken fillet with salt, black pepper powder, mustard powder, chilli sauce, soy sauce, worcestershire sauce and oil.
  • Keep aside for 2 hours.
  • Melt butter in a pan.
  • Add flour and mix well.
  • Put 1/2 cup water.
  • Keep stirring till it gets thick.
  • Add brown sugar, salt , black pepper powder, mushrooms and cheese.
  • Cook for few minutes.
  • Grill the chicken on the grill pan or frying pan till done.
  • Take mayonnaise in a bowl.
  • Add chilli sauce, mustard powder, salt and black pepper powder and mix them together.
  • Cut the croissants in half.
  • Spread mayonnaise mixture.
  • Put grilled chicken steak, top with the mushroom cheese sauce, lettuce, cucumber and tomatoes.
  • Cover with the other half.
  • Heat it on the grill pan and serve.

Grilled Chicken Kulcha Sandwich

Ingredients for preparing chicken (marinading) :

  1. Boneless chicken breast 2
  2. Red chilli crushed 1/2 tsp.
  3. Soy sauce 2 tbsp.
  4. Chilli sauce 1 tbsp.
  5. Mustard powder 1 tsp.
  6. Black pepper powder 1/2 tsp.
  7. Salt 1/2 tsp.
  8. Oil 1 tsp.

Ingredients for Sandwich filling:

  1. Kulcha Naan 2
  2. Mayonnaise 2 tbsp.
  3. Chilli Garlic Sauce 2 tbsp.
  4. Onions (thinly sliced) 1
  5. Cucumber (thinly sliced) 1
  6. Tomatoes (thinly sliced)  2
  7. Lettuce leaves 3-4

Method:

  • Marinade the chicken with red chilli crushed, soy sauce, chilli sauce, mustard powder, black pepper powder, salt and oil.
  • Keep aside for half an hour.
  • Grill the chicken and cut it in small pieces.
  • Take Kulcha naan and cut it into four portions.
  • Spread mayonnaise on them.
  • Take one portion of kulcha naan and top it with lettuce, chicken,  onions, tomatoes, cucumber and chilli garlic sauce on top.
  • Cover with other portion.
  • Serve with kachumber salad.

Club Sandwich

Ingredients:

  1. Chicken (Boneless breast) 2
  2. Eggs 4
  3. Bread slices 12
  4. Mayonnaise 4 tbsp.
  5. Cheese slices 4
  6. Red chilli powder 1/2 tsp.
  7. Salt 1/2 tsp.
  8. Black pepper powder 1/4 tsp.
  9. Oil 1 tsp.
Method:
  • Marinade the chicken with salt, red chilli powder, black pepper powder and oil for half an hour.
  • Grill and shred into small pieces.
  • In a bowl beat eggs with little salt and pepper.
  • Fry them like omelette.
  • Cut in 4 equal portions.
  • Put mayonnaise on bread slices.
  • Arrange the sandwich in two layers with bottom layer containing egg and cheese slice  and the top layer containing lettuce and shredded chicken.
  • Grill the whole sandwich together with little oil in frying pan so bread slices get crisp.
  • Remove the edges of bread slices and cut them diagonally.
  • Serve with potato wedges/fries and HP sauce.

Note:

Shredded chicken can also be replaced with bologna sausage (chicken) slices .
