Thai Style Prawn Green Curry

Thai Prawn Green Curry

Ingredients:

  1. Thai Green curry paste 4tbsp.
  2. Coconut cream 1 can
  3. Water 1/2 cup
  4. Prawns 1/2 kg.
  5. Kaffir lime leaves 4 (optional)
  6. Fish sauce 2tbsp.
  7. Vegetable oil 4tbsp.
  8. chillies 2 (optional)

Method:

  •  Heat vegetable oil in a wok.
  • Add thai green curry paste and water.
  • Stir fry until an aroma develops then lower the heat.
  • Add coconut cream.
  • Bring to boil.
  • Add prawns, kaffir lime leaves and fish sauce.
  • Simmer until cooked through.
  • Add chillies.
  • Cook for another minute.
  • Take out in a dish.
  • Serve with boiled rice.

 

 

Masala Stuffed Fried Pomfret

Fried Pomfret

Ingredients:

  1. Pomfret (small) 1 kg
  2. Salt 1 tsp.
  3. Vinegar 4 tbsp.
  4. Red chilli powder 3 tbsp.
  5. Ginger garlic paste 2 tbsp.
  6. Turmeric 1/2 tsp.
  7. Oil for deep frying

Ingredients for stuffing Masala:

  1. Whole Coriander 2 tbsp.
  2. Cumin seeds 1/2 tsp.
  3. Red chilli crushed 1 tbsp.
  4. Salt 1/4 tsp.

Method:

  • In a bowl mix together ginger garlic paste, red chilli powder, salt, turmeric and vinegar to prepare a marination.
  • Put cuts on the Pomfret.
  • Rub the marination on the fishes.
  • Leave it to marinade for atleast 2 hours in the refrigerator.
  • Roast whole coriander and cumin seeds.
  • Crush roasted corriander and cumin.
  • Put in a bowl.
  • Add crushed red chillies and salt.
  • Mix them together to make masala for stuffing.
  • Keep aside.
  • Deep fry fish untill golden in colour.
  • Stuff with crushed masala.
  • Serve hot.

Prawns Pulao (Prawns Tahari)

Prawns Pulao

Ingredients:

  1. Prawns 1 kg.
  2. Tomatoes (sliced) 4
  3. Onions (sliced) 3
  4. Ginger garlic paste 1 tbsp.
  5. Red chilli powder 1 1/2 tsp.
  6. Crushed red chilli 1 tsp.
  7. Turmeric powder 1/2 tsp.
  8. Coriander powder 1 1/2 tsp.
  9. Salt 3 tsp.
  10. Whole black pepper 10
  11. Cloves 8
  12. Cinnamon 1/2 inch piece
  13. Black cardamom 2
  14. Cumin seeds 1 tsp.
  15. Potatoes quarted  4
  16. Rice 4 cups
  17. Oil 1/2 cup

Method:

  • Heat oil in a pan.
  • Add onions cook till brown.
  • Put tomatoes, ginger garlic paste, red chilli powder, crushed red chilli, salt, coriander powder and turmeric powder.
  • Stir and cook for 2-3 minutes.
  • Add potatoes.
  • Cover and cook till the tomatoes are soft and oil comes out.
  • Add 4 cups water, cloves, whole black pepper, cumin seeds, black cardamom, cinnamon and cardamom.
  • Bring to boil and cook for another 10 minutes or till the potatoes are soft.
  • Add prawns and cook for 2-3 minutes.
  • Soak rice for half an hour.
  • Wash and add soaked rice to the prawns.
  • Add more water if needed to cook the rice.
  • When the water dries up lower the heat and cook on low flame (dum)  for 15 minutes.
  • Take out in a dish and serve with raita, vegetable salad and fried green chillies.

Baked Fish with Boiled Rice

Ingredients:

  1. Fish preferably Red Snapper (whole) 1kg.
  2. Salt 1 tsp.
  3. Red chilli powder 2 tbsp.
  4. Cumin powder 1 tsp.
  5. Black pepper crushed or powder 1tsp.
  6. Ginger garlic paste 1 tbsp.
  7. Vinegar 4 tbsp.
  8. Oil 2 tbsp.
  9. Lemon (thinly sliced) 1
  10. Aluminium foil
  11. Boiled rice to serve with the fish

Method:  

  • In a bowl take ginger garlic paste, salt, red chilli powder, cumin powder, vinegar, black pepper crushed and oil.
  • Mix them together to make a thick paste.
  • Marinade the fish with this paste.
  • Refrigerate it for 2 hours.
  • Heat oven at 180 ᵒ C.
  • Take aluminium foil put the marinaded fish in the center with the marinade.
  • Insert sliced lemons in the cuts on the fish.
  • Fold the sides of the aluminum foil to completely seal it.
  • Put in the oven.
  • Bake for 45-50 minutes.
  • Take out from the oven and serve with boiled rice.

King Fish Biryani

Ingredients for fish marination:

  1. Indian Mackerel (sliced)1 kg.
  2.  Salt 3/4 tsp.
  3. Red chilli powder 1 tsp.
  4. Turmeric 1/2 tsp.
  5. Vinegar 3 tbsp.
  6. Ginger garlic paste 1 tbsp.

Ingredients for masala:

  1. Oil 4 tbsp.
  2. Onions (sliced) 4
  3. Tomatoes 3
  4. Ginger garlic paste 1 tbsp.
  5. Green chilli paste 1 tsp.
  6. Red chilli powder 1 1/2 tsp.
  7. Coriander powder 1 1/2 tsp.
  8. Turmeric 1/2 tsp.
  9. Salt 1 1/2 tsp.
  10. Curry leaves few
  11. Fresh coriander 2 tbsp.
  12. Green chillies 5
  13. All spice powder 1/2 tsp.

Ingredients for rice:

  1. Rice 3 cups (soak in water for 1/2 an hour)
  2. Salt 4 tsp.
  3. Whole black pepper 8
  4. Cinnamon 1 inch piece
  5. Black cardamom 2
  6. Black cumin seeds 1/4 tsp.
  7. Clove 6

Ingredients for baghar:

  1. Oil 2 tbsp.
  2. Milk 3tbsp.

Method:

  • In a bowl mix together salt, red chilli powder, turmeric, ginger garlic paste and vinegar.
  • Marinade the fish with this paste for 1/2 an hour hour.
  • Heat oil in a pan.
  • Add onions and fry till light brown.
  • Put ginger garlic paste, red chilli powder, coriander powder, salt, tomatoes, all spice powder and green chilli paste.
  • Cook till the tomatoes are soft and oil separates.
  • Boil soaked rice with cloves, black cumin seeds, whole black pepper, cinnamon, black cardamom and salt until done.
  • Strain them.
  • In the prepared masala sprinkle fresh coriander and curry leaves.
  • Put green chillies.
  • Cover it with boiled rice.
  • Sprinkle milk and oil on top.
  • Cover and cook on low flame (dum) for 15-20 minutes.
  • Shallow fry the marinated fish.
  • Take out rice in a dish.
  • Put fish pieces on top.
  • Serve with raita.

Quick and Easy Tuna Sandwich

Ingredients:

  1. Canned tuna (half can)
  2. Brown bread 4 slices
  3. Cucumber (sliced) 6-8 slices
  4. Tomatoes (sliced) 6 slices
  5. Black pepper powder a pinch
  6. Margarine or mayonnaise 1 tbsp.

Method: 

  • Spread margarine on all slices of bread.
  • Mix black pepper powder in tuna.
  • Put tuna on one slice of the bread.
  • Place cucumber and tomatoes on top.
  • Cover with the other slice of bread.
  • Remove the edges of the sandwich.
  • Cut diagonally.
  • Do same with the other slices of bread.
  • Put in a serving dish.
  • Garnish with cucumbers or tomatoes and serve.

Garlic Prawns

Ingredients for marination:

  1. Prawns 1/2 kg.
  2. Light soy sauce 1 tsp.
  3. Black pepper powder 1/4 tsp.
  4. Salt 1/4 tsp.
  5. Corn flour 2 tbsp.
  6. Flour 1 tbsp.
  7. Egg white 2 tbsp.
  8. Oil for deep frying

Ingredients for sauce:

  1. Onion (sliced) 1
  2. Garlic (chopped) 1 tsp.
  3. Oyster sauce 1 tbsp.
  4. Soy sauce 1 tbsp.
  5. Chilli sauce 2 tbsp.
  6. Oil 1 tbsp.
  7. Corn flour 1 tbsp.
  8. Chicken stock or water 1 cup

Method:

  • For Marination: Marinade the prawns with light soy sauce, black pepper powder, salt, corn flour, flour and egg white for 15 minutes.
  • Deep fry till golden brown.
  • For Sauce: Heat oil in a wok.
  • Add garlic and fry for few seconds.
  • Put onions and fry them too for 2 -3 minutes.
  • In chicken stock add oyster sauce, soy sauce, chilli sauce and corn flour.
  • Add it to the frying onions and garlic.
  • Cook till it gets thick.
  • Put fried prawns.
  • Cook for 1 minute.
  • Take out in a dish.
  • Serve with boiled rice, egg fried rice or boiled noodles.

Prawn Chilli Dry

Ingredients for marination:

  1. Prawns 1/2 kg.
  2. soy sauce 1 tsp.
  3. Salt 1/4 tsp.
  4. Black pepper powder 1/2 tsp.
Ingredients for batter:
  1. Egg 1
  2. Corn flour 2 tbsp.
  3. Flour 1 tbsp.
  4. Baking powder 1/2 tsp.
  5. Salt 1/4 tsp.
  6. Water if requried
Ingredients for Sauce:
  1. Onions (sliced) 2
  2. Green chillies (cut lenght wise) 10-12
  3. Soy sauce 1 tbsp.
  4. Oil 1 tsp.
  5. Garlic (chopped) 1 /2 tsp.

Method:

  • Marinade the prawns with soy sauce, salt and black pepper powder.
  • Keep aside for 15-20 minutes.
  • In a bowl take egg, corn flour, flour and baking powder.
  • Mix well,add little water if needed to make batter.
  • Dip marinated prawns in the batter and deep fry till crisp.
  • In a wok heat oil.
  • Add garlic and fry for few seconds.
  • Put onions and green chillies.
  • Fry for one or two minutes.
  • Add fried prawns and soy sauce.
  • Toss them.
  • Take out in a dish and serve with boiled rice or noodles.

Prawns with Cluster Beans (Gawar Phali with Jhinga)

Ingredients:

  1. Prawns 1/2 kg.
  2. Cluster beans (gawar phali) 1/2 kg.
  3. Onions (sliced) 2
  4. Tomatoes (sliced) 2
  5. Cumin seeds 1/2 tsp.
  6. Red chilli powder 1 tsp.
  7. Salt 1 tsp.
  8. Turmeric 1/4 tsp.
  9. Green chillies 4-6
  10. Ginger garlic paste 1 tsp.
  11. Oil 2 tbsp.

Method:

  • Heat oil in a pan.
  • Add onions an fry till they turn light brown.
  • Put cluster beans, tomatoes, red chilli powder, turmeric, cumin seeds, ginger garlic paste and salt.
  • Stir, cover and cook for 15-20 minutes or till the tomatoes are soft.
  • Add Prawns and green chillies.
  • Cook for another 10 minutes.
  • Take out in a dish and serve.
