Diced Chicken with Mushrooms

Ingredients for marination:

  1. Chicken (cut in small diced pieces) 1/2 kg.
  2. Sesame seed oil 1 tsp.
  3. Light soy sauce 1 tsp.
  4. Corn flour 1 tsp.
Ingredients for sauce:
  1. Straw mushrooms (cut into half) 1 can
  2. Corn flour 1 tbsp.
  3. White pepper 1/2 tsp.
  4. Dark soy sauce 2 tbsp.
  5. Chilli sauce 1 tbsp.
  6. Chicken powder 1/2 tsp.
  7. Chicken stock 2 cups
  8. Garlic (chopped) 1 tsp.
  9. Oil 2 tbsp.

Method:

  • Marinade the chicken with light soy sauce, corn flour and sesame seed oil.
  • Leave for 10 minutes.
  • Heat oil in a wok.
  • Add garlic and fry for few seconds.
  • Put marinated chicken.
  • Fry till it changes colour and gets white.
  • In a bowl take chicken stock, dark soy sauce, chicken powder, chilli sauce and cornflour.
  • Mix them together.
  • Pour on the chicken.
  • Cook till it gets thick.
  • Take out in a serving dish.
  • Serve with rice or noodles.

Chuqander Gosht (Beetroot with Mutton)

Ingredients:

  1. Mutton 1/2 kg.
  2. Beetroot (sliced) 1/2 kg.
  3. Onions (sliced) 4-5
  4. Tomatoes (sliced) 6
  5. Green chillies 5
  6. Red chilli powder 1 1/2 tsp.
  7. Turmeric powder 1/4 tsp.
  8. Coriander powder 1 tsp.
  9. Salt 1 1/2 tsp.
  10. Oil 4 tbsp.
  11. Ginger garlic paste 1 tbsp.
  12. Black cardamom 1
  13. Cumin seeds 1/2 tsp.
  14. Cloves 5
  15. black pepper corn 6
  16. Cinnamon 1 small stick

Method:

  • Heat oil in a pan.
  • Fry onions till light brown in colour.
  • Add tomatoes, red chilli powder, turmeric powder, coriander powder and cumin seeds.
  • Cook till tomatoes are soft.
  • Add meat, ginger garlic paste, salt, black pepper corn, black cardamom, cloves and cinnamom.
  • Mix, cover and cook on low heat till water dries up and oil separates.
  • Then put 1-2 cup water and cook till the meat is tender and water dries.
  • Add beetroot and green chillies.
  • Cook for another 15-20 minutes adding little water if required to tender the beetroot.
  • Take out in a dish,
  • Garnish with fresh coriander and serve with boiled rice.

Chanay ki Daal aur Palak (Split Chickpeas with Spinach)

Ingredients for Daal:

  1. Split chickpeas (channa Daal) 2 cups
  2. Spinach (finely chopped) 1 bunch
  3. Fresh Fenugreek (finely chopped) 2 tbsp.
  4. Dill (finelly chopped) 3 tbsp.
  5. Onion (sliced) 1
  6. Tomatoes (sliced) 2
  7. Salt 1 1/ 2 tsp.
  8. Red chilli powder 2 tsp.
  9. Coriander powder 2 tsp.
  10. Turmeric powder 1/4 tsp.
  11. Water 3-4 cups

Ingredients for Baghar:

  1. Oil 3 tbsp.
  2. Whole red chillies 6
  3. Cumin 1tsp.
  4. Garlic (chopped) 4 cloves
  5. Curry leaves few

Method:

  • Soak channa daal for 1 hour.
  • Wash and put in a pan with water, red chilli powder, turmeric powder, onion,tomatoes, coriander powder, salt, spinach, fresh fenugreek and dill.
  • Put on fire.
  • Cook till it starts to boil.
  • Lower the heat and let it cook on low heat till the daal is tender and little water in left.

For baghar:

  • Heat oil in a frying pan.
  • Add garlic, cumin,whole red chillies and curry leaves.
  • Fry till chillies and garlic gets brown.
  • Pour on top of the daal.
  • Take out in a dish and serve.

Gola Kebab

Ingredients:

  1. Mince beef 1 kg.
  2. Onion (brown and crushed) 2
  3. Ginger garlic paste 1 tbsp.
  4. Red chilli powder 2 tsp.
  5. All spice powder (garam masala powder) 1 tsp.
  6. Salt 2 tsp.
  7. Coconut (grated) 2 tbsp.
  8. Poppy seeds 2 tbsp.
  9. Gram flour (besan) 2 tbsp.
  10. Raw papaya (grinded to paste with skin) 2 tbsp.
  11. Oil for frying or grilling

Method:

  • Roast Poppy seeds, coconut and gram flour separately.
  • Grind them together.
  • In a chopper mix together mince meat, raw papaya paste , ginger garlic paste and onions.
  • Take it out in a bowl.
  • Add red chilli powder, salt, all spice powder and roasted grinded masala.
  • Mix them and keep aside for 1 hour.
  • Make thick oval shaped kebabs.
  • Shallow fry or grill them on grilller.
  • Take out in a dish and serve with salad and chutney.

Fried Rice with Chicken Burger Pattie

 Ingredients:

  1. Rice ( boiled ) 2cups
  2. Egg 1
  3. Carrots (shredded) 1/2 cup
  4. Button Mushrooms (sliced) 1/2 cup
  5. Spring Onions (chopped) 2 tbs.
  6. K&N’s Burger Pattie (cut in small cubes) 1
  7. Soy sauce 1 tbsp.
  8. Chicken powder 1/2 tsp.
  9. Oil 1 tbsp.

Method:

  • Take a frying pan and put oil into it .
  • Then fry the slices of burger pattie till they are well cooked and golden in colour.
  • Take them out in a plate.
  • Beat the egg.
  • In the same oil pour the beaten egg and scramble it.
  • Add the vegetables to the pan and fry for few seconds.
  • After that add the rice and the fried pattie to the rice and mix well.
  • Later add soy sauce and chicken powder.
  • And their it is your fried rice with chicken burger pattie is ready!

Nargisi Koftay (Egg Stuffed Meat Balls)

Ingredients for kofta’s:

  1. Mince beef 1/2 kg.
  2. Boiled eggs  6
  3. Ginger garlic paste 1 tbsp.
  4. Red chilli powder 1 tsp.
  5. Salt 1 tsp.
  6. All spice powder or garam masala 1 tsp.
  7. Chanay or gram flour (besan) 1 tbsp.
  8. Poppy seeds 1 tbsp.
  9. Cumin seeds 1 tsp.
  10. Onion 1
  11. Green chillies 3
  12. Mint leaves (chopped) 1/2 cup
Method:
  • Roast poppy seeds, gram flour and cumin seeds separately.
  • Grind them together.
  • In a chopper grind together mince, onion, green chillies, ginger garlic paste and grinded masala.
  • Take out in a bowl and add chopped mint, red chilli powder, salt, gram flour and mix them together.
  • Make small balls of the mince.
  • On the palm of one hand press it flat.
  • Put boiled egg in the center.
  • Fold the sides on the egg.
  • Cover, press and give again round ball shape.
  • Egg should be fully covered with the mince.
  • Follow this with all the eggs.

Ingredients for gravy:

  1. Onions 4
  2. Tomatoes 2
  3. Yogurt 1/2 cup
  4. Ginger garlic paste 1 tbsp.
  5. Salt 1 tsp.
  6. All spice powder 1 tsp.
  7. Red chilli powder 1 1/2 tsp.
  8. Coriander powder 1 1/2 tsp.
  9. Turmeric powder 1/4 tsp.
  10. Oil 3/4 cup

Method for gravy:

  • In a pan heat oil.
  • Add onion and fry till golden brown.
  • Take them out from the oil.
  • Grind onions and tomatoes.
  • Put them back in the oil.
  • Add ginger garlic paste, red chilli powder, turmeric, coriander powder and salt.
  • Stir and cook till oil separates.
  • Put kofta’s one by one.
  • DO NOT STIR.
  • Beat yogurt.
  • Pour on top.
  • Sprinkle all spice powder.
  • Shake the pan lightly to mix.
  • Add 1 cup water if needed.
  • Cover and cook on low heat for 20-25 minutes.
  • Take out in a dish and cut them in half.
  • Sprinkle fresh coriander and serve.

Potato Stuffed Golden Coins

Ingredients:

  1. Potatoes (mashed) 2
  2. Bread slices 10
  3. Red chilli powder 1/2 tsp.
  4. Salt 1/2 tsp.
  5. Mint leaves (chopped) 1 tsp.
  6. Cumin seeds 1/4 tsp.
  7. Eggs 2
  8. Black pepper a pinch
  9. Salt a pinch
  10. Oil for frying

Method:

  • Take mashed potatoes in a bowl.
  • Add salt, red chilli powder, cumin seeds and mint leaves.
  • Mix them.
  • Cut the bread slices with round shaped cutter or using any round shaped bowl.
  • Spread mashed potatoes on one slice of a bread and cover with the other slice.
  • Beat eggs in a bowl with salt and pepper.
  • Dip the sandwiches in the egg and deep fry till golden.
  • Take out on the kitchen towel.
  • Place them on a serving dish.
  • Serve with ketchup.

Stir Fried Egg Noodles with Chicken Chunks

Ingredients:

  1. Egg noodles 1 pkt.
  2. K&N’s chicken chunks 2 cups
  3. Napa cabbage (chinese cabbage shredded) 3 cups
  4. Carrots (shredded) 1 cup
  5. Capsicums (cut in thin slices) 1
  6. Bean sprouts 1/4 kg.
  7. Ginger (chopped) 1 tsp.
  8. Soy sauce 3 tbsp.
  9. Oyster sauce 1 tbsp.
  10. Chilli sauce 2 tbsp.
  11. Sesame seed oil 1 tsp.
  12. Knorr chicken cube 1
  13. Corn flour 1 tsp.
  14. Oil 1 tbsp.

Method:

  • Boil the noodles and keep aside.
  • In a wok heat oil.
  • Add ginger and fry for few seconds.
  • Add chinese cabbage, carrots, capsicums and bean sprout.
  • Fry for one minute.
  • Add chicken chunks.
  • In a bowl mix together soy sauce, chilli sauce, oyster sauce, chicken cube and corn flour adding little water.
  • Add it to the wok.
  • Cook till it gets thick.
  • Add noodles and toss.
  • Sprinkle sesame seed on top.
  • Take out in a dish and serve.
